Buffalo Chicken Salad

My version of chicken salad. Buffalo sauce is one of my favorite things so I used the wing sauce as a substitute for mayo. Chicken breast, a small box of frozen cauliflower, 2-3 celery stalks. Chop in food processor, fold in wing sauce to taste. I put some of the leftover celery stalk and it made a great healthy appetizer idea. No double dipping at a party! Lol enjoy.

Venturing into my first fitness competition :-/

Many moons ago I had a dream that one day I would be disciplined enough to train and sacrifice enough and make it to a fitness competition. Well, damn it here we go! About 22 years ago (grrr it hurts to say that) I worked out…rephrase that, I walked around a gym aimlessly not sure what the hell I was doing and there was this girl in that gym who won a Ms. Fitness USA. I saw her and I said, “I want to be like her”! I never forgot her! I have finally decided it’s time and I will hopefully be competing in my first and probably only 🙂 competition this summer/fall. I have been on a roller coaster of weight up and down with all my pregnancies but I’m back and in the best shape of my life. So here we go… Navigating this process on a restricted diet is challenging sometimes but I’m ready! Bring it on!

I have included some pictures of where I have been (pregnancy I gained 100lbs with twins and 87lbs with single) and where I was a few weeks ago. I need to take some progress pics.

I will try to be consistant about updating the blog however with 3 small kids, a job and training the blog is time-consuming. So, please check out my Facebook Page for more frequent updates and lots of great food ideas! I’ve lost an additional 5 lbs and eat all day yummy food! I’m Back! Blog Log in Problems Grrrrrr

Hi Everyone! I have had some technical difficulties with my blog but I’m back! I’m hoping to switch it up a bit (updating). Hopefully have some exciting fun things coming up. Going on a fitness journey so my diet has changed alot and I want the blog to reflect it.
